Gluten Free/Casein Free is a totally different way of Shopping, not so much a different way of cooking.
For everything your family or child normally eats, there is a gluten free version out there. You can find them at Fruitful Yield, Whole Foods Market, Trader Joes, even Jewel/Osco. You can find gluten free casein free version of pasta, hot dogs, bread, English muffins, bagels, chocolate chip cookies, pretzels, frozen bread, chicken nuggets, corn dogs, batters, bread mixes, even pound cake! As long as you shop these markets to find out where to get all the usually foods your family needs. Remember, it’s easier to do Gluten free/Casein free if you don’t keep such foods at home at all. If the parents want to eat them, they can eat them during lunch or date night, when the children are not around.

Can I get the diet down in a week or two?
No. This will be a gradual process, because you have to find alternatives to everything your child like. So take your time, and call us if you need any help at all

If one person in a household benefits from this type of diet, you will be surprised to see other loved ones are feeling better also.
Dr. Hong had eye pain in the past, usually happen at night, and usually happen after we eat wheat. When he went on the gluten free diet, the eye pain went away. We have seen better temper and behavior in young patients’ siblings who went on the diet with them.

Are there reactions to this type of diet? What should I expect?
Yes. A person who has problems with Wheat and Dairy usually has somewhat of an addiction to them. Approximately two weeks after you begin this type of diet, they seem to go crazy for a week or two. That is definitely withdrawal symptoms. If you stick to your guns and not give in, it will pass soon enough, then your child will have no problem with the diet.

What is wrong with the dairy in this country?
High does of female hormones and antibiotics makes the conventional dairy a problem for our body. Moreover, human lose the enzyme to digest dairy around 7 years of age. After all, what other animals, other than us, would drink milk in adulthood?

What is wrong with the wheat in this country?
Genetically modified crops, coupled with high level of pesticides and a damaging bleaching process that makes the wheat incompatible with our body. Parents of our young patients reported that, when in Europe of Asia, there were less problems when they eat wheat.

I don’t know what to say to explain to others around me about this diet…
At first, the change Gluten free/Casein free bought is overwhelming. So it’s ok to be in shock when you first hear about it. However, if the feeling of “I don’t know what to do” continues then you should re-think the priorities. It’s not about you. It’s about giving your child the optimal environmental to thrive, so they reach their full potential in life. Sometimes in order to do that, changes have to be made.
Here is what to say to family members: “We brought our child to see a doctor who found out that wheat/dairy gave him rashes (or sinus infections or constipation).” So he wants us not to give him wheat/dairy for a while, see if he/she gets better. Explain to others that this is an allergy, which is easier for people to understand. Having trouble with your own family? Let you spouse say this to them the very first time. You can be the one explaining to your in-law’s family. Our families tend to respect our spouse more than us, at least that the usual case.
Should you need a letter for school so your child can have such diet, Dr. Hong will be happy to write a letter for such “prescription”.

What do we do when we eat out?
One, you can eat at restaurants with gluten free food. PF Changs, Claim Jumper and many other restaurants have a gluten free menu. Triumph Dinning has a gluten free restaurant guide for those who need the gluten free diet. Two, eat at seafood restaurants where not all food has battering or butter. Refuse the rolls or butter spread. Also you can order hamburgers without the bun and cheese. Keep in mind McDonald’s French fries has gluten! They put gluten powders on them. Three, cook more. Home cooked foods have less additives and preservatives, so it’s healthier for everyone.
